Appearance and Color Visual Inspection Observe the sample under natural light or standard light source to check if it is a clear, colorless to pale yellow oily liquid with no suspended particles or precipitates.
Melting Point Capillary Melting Point Method Load the sample into a capillary tube and heat it at a standard rate; record the temperature when it is completely melted. The melting point of triolein is approximately 5–10℃.
Acid Value (Acid Value) GB/T 5530-2005 or AOAC 996.11 Determine free fatty acids by titration with potassium hydroxide ethanol solution, using phenolphthalein as an indicator. Calculate the amount of KOH in mg per gram of sample, which should be ≤ 0.5 mg KOH/g.
Saponification Value (Saponification Value) GB/T 5534-2008 or AOAC 920.160 Saponify the sample with excess potassium hydroxide and back-titrate the remaining alkali with hydrochloric acid. Calculate the amount of KOH consumed per gram of sample. The theoretical value for triolein is approximately 190–195 mg KOH/g.
Iodine Value (Iodine Value) Wijs Method (GB/T 5532-2008) React the sample with Wijs reagent containing iodine monochloride. Titrate the unreacted iodine with sodium thiosulfate and calculate the amount of iodine absorbed by unsaturated bonds. The iodine value of triolein is approximately 85–90 g I₂/100g.
Peroxide Value (Peroxide Value) GB/T 5538-2005 or AOAC 965.33 Determine peroxides by reacting them with potassium iodide to liberate iodine, then titrate with sodium thiosulfate. Results are expressed as meq O₂/kg. Control should be ≤5 meq/kg to assess oxidation level.
